Originating in Norway, Brunost, or brown cheese, is created by slowly heating leftover cheesemaking whey until the milk sugars caramelize, resulting in its signature fudge-like texture and rich, complex flavour. Traditionally enjoyed at breakfast, it pairs beautifully with waffles, pancakes, or toast, served with berry jam or fresh berries. It also makes a delightful addition to cheese boards and platters.
At Eleftheria, we honour these traditional cheesemaking techniques while crafting an artisanal Brunost with a uniquely savoury and nuanced flavour profile. Believe it or not, its texture is reminiscent of the beloved Indian milk sweet Peda. As a tribute to Indian craftsmanship, each wheel is embossed with our initials in Devanagari script, “एल एफ”, making it distinctly our own.
