Traditional farmhouse Cheddar cheese originates from its namesake village of Cheddar in Somerset, England.
Cheddar gets its name from a process called cheddaring. To make Cheddar, the milk solids are finely cut and left to drain. Once drained, they are cut into thick slabs. These slabs of cheese curds are stacked on top of each other, which helps drain out more moisture. This process is repeated until the cheese curds reach the desired consistency. The slabs are then shredded into tiny pieces and generously sprinkled with sea salt. These cheese curds are pressed into a wheel, weighing roughly 20-25 kg .Traditionally, these wheels are coated in lard and wrapped in muslin cloth, which gradually fuses with the cheese rind.
At Eleftheria, we follow these traditional artisanal Cheddar-making techniques to create our award-winning Clothbound Cheddar, ‘Moony’. Instead of lard, we coat our Cheddar with ghee made from farm-fresh cream before wrapping it in muslin cloth, giving the cheese its characteristic natural rind. We then patiently age each wheel for 11-12 months before it reaches your cheese board. The clothbound rind not only gives the cheese its beautiful rustic appearance but also protects it while allowing it to develop a deeply complex and lingering flavour profile.
Our Clothbound Cheddar pairs beautifully with seasonal mango chutney and a full-bodied, ruby-red Cabernet Sauvignon.
