Halloumi originated sometime between AD 395 – 1191 in the Mediterranean island of Cyprus.
It is an unripened, brined cheese with a slightly chewy texture, traditionally made with sheep and/or goat milk. Halloumi does not melt when heated & therefore is an ideal cheese for grilling or frying.
