Halloumi is a traditional Mediterranean cheese that originated on the island of Cyprus between the 4th and 12th centuries. Celebrated for its unique ability to hold its shape when heated, Halloumi has become a favourite around the world for grilling, pan-frying, and barbecuing.
Traditionally made from sheep’s and goat’s milk, Eleftheria Halloumi is handcrafted using fresh indigenous cow’s milk. It is lightly salted and has a firm, slightly chewy texture with a clean, milky flavour and a beautifully golden crust when grilled.
One of Halloumi’s defining characteristics is its high melting point, allowing it to develop a crisp, caramelised exterior while remaining soft and tender inside. Naturally high in protein and calcium and lower in lactose than many fresh cheeses, it is a versatile addition to everyday meals.
