Drama Queen – Raclette Style Cheese
Every winter, thousands of flamingos fly in from the Rann of Kutch to feed on the mudflats of Thane Creek, between Bhandup and Airoli, close to our creamery. Pink, loud and impossible to ignore, they bring a little drama to the city each year. This cheese is our homage to them, and it has a flair for drama of its own in the way it melts. We make it in square wheels, with little flamingos embossed into the rind, so your wedge may carry part of the design. It has a lovely savoury, nutty flavour profile and melts beautifully in baked dishes, Fondue, Grilled cheese sandwiches and Raclette.
Note on the rind: The rind is natural and edible, but firm, as the cheese is well aged. We recommend removing it before eating. For raclette, you can keep it on while melting, but the rind itself will not melt
