Our Clothbound Cheddar ‘Moony’ made India proud by winning a Gold at the prestigious World Cheese Awards, 2022 held in Wales.
Traditional farmhouse Cheddar Cheese originates from it’s namesake town called Cheddar in Somerset, England.
Cheddar gets it’s name from a process called Cheddaring. To make Cheddar, the milk solids are finely cut and left to drain. Once drained, they are cut into thick slabs. These slabs of cheese curds are stacked on top of each other, which helps in draining out more moisture. This process is then repeated again until the cheese curds reach the desired consistency. Now, the slabs are shredded into tiny pieces & generously sprinkled with sea salt. These cheese curds are then pressed into a wheel, weighing roughly around 20-25kgs (depending on the cheesemaker). Traditionally, these wheels are coated in lard, wrapped with a muslin cloth until it fuses beautifully with the cheese rind.
At Eleftheria, we imbibe these traditional artisanal Cheddar making techniques to make our award-winning Clothbound Cheddar – ‘Moony’. Instead of Lard, we coat our Cheddar with Ghee made from farm fresh cream & wrap it with a muslin cloth which gives the cheese it’s charecteristic rind. We take pride in skilfully, lovingly aging our Cheddar Cheese for 11-12 months before it adorns your Cheese Platters. The clothbound rind not only gives the cheese it’s beautiful rustic appearance, but it helps in protecting the rind & creating a very complex, lingering flavour profile.
Our cloth bound Cheddar Cheese pairs beautifully with some seasonal Mango chutney with a full-bodied, ruby red Cabernet Sauvignon.
